How To Cook Rice Noodles

Rice noodles are light, versatile, and perfect for stir-fries, soups, salads, and noodle bowls. They cook much faster than wheat pasta and have a delicate texture that absorbs flavours beautifully. Because rice noodles can become too soft or sticky if overcooked, the key is to hydrate them gently and finish them in the sauce or broth you are preparing. - Choose and Prepare the Rice Noodles
Rice noodles come in different shapes such as thin vermicelli, medium flat noodles, and wide pad-thai-style strips. Check the packaging to confirm the type you’re using, as thicker noodles need slightly more soaking time. Place the noodles in a large bowl and separate any that are stuck together. You do not need to rinse them yet; they will hydrate during soaking. - Soak the Noodles in Hot Water
Instead of boiling rice noodles aggressively, soak them in hot water to prevent them from becoming mushy. Boil water separately and pour it over the noodles in the bowl. Make sure they are fully submerged. Let them soak for about five to ten minutes for thin noodles and up to fifteen minutes for thicker ones. Stir occasionally to prevent sticking. For soups, you can add soaked noodles directly to the broth during the last two to three minutes of cooking. The noodles warm through quickly and take on the flavour of the soup. This method works well for dishes like pho, chicken noodle soup, or spicy coconut broths. - Serve and Enjoy
