-
Ingredients You Will Need
To make flavourful chilli cheese fries, prepare the fries, the chilli topping, and the cheese layer.
- 4 large potatoes or a bag of frozen fries
• 2 tablespoons cooking oil if making fresh fries
• 500 grams ground beef
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 cup canned crushed tomatoes
• 1 tablespoon tomato paste
• 1 teaspoon paprika
• 1 teaspoon cumin
• 1 teaspoon chilli powder
• Salt and black pepper to taste
• 1 to 2 cups shredded cheddar cheese
Optional toppings include sour cream, chopped spring onions, or sliced jalapeños.

Preparing the Fries
If using fresh potatoes, peel and cut them into evenly sized strips. Rinse under cold water to remove excess starch, then pat dry thoroughly.
Heat oil in a deep pan and fry the potatoes until golden and crispy. Alternatively, bake them in a preheated oven at 200°C for about 25 to 35 minutes, turning halfway through. Frozen fries can be baked according to package instructions.
The key is achieving crispy fries so they can hold the toppings without becoming soggy.

Cooking the Chilli
In a large pan over medium heat, cook the ground beef until browned. Break it apart with a spoon as it cooks. Drain excess fat if necessary.
Add chopped onion and cook until soft, then stir in garlic and cook briefly until fragrant.
Mix in crushed tomatoes, tomato paste, paprika, cumin, and chilli powder. Season with salt and black pepper. Allow the mixture to simmer for about 10 to 15 minutes until thickened. The chilli should be rich and slightly saucy but not watery.
Taste and adjust seasoning if needed.

Assembling and Baking
Spread the hot fries evenly on a baking tray or oven-safe dish. Spoon the prepared chilli generously over the fries. Sprinkle shredded cheddar cheese evenly on top.
Place the tray in the oven and bake for about 5 to 10 minutes, just until the cheese melts and becomes bubbly.
Remove from the oven and add any optional toppings such as sour cream or jalapeños before serving.
