Steps to Make Dhal Curry

  1. Rinse and Cook the Lentils
    Wash the lentils thoroughly under running water until the water runs clear. In a pot, add the lentils and three cups of water. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the lentils are soft and mushy. Stir occasionally to prevent sticking.
  2. Prepare the Tempering (Tadka)
    In a separate pan, heat oil or ghee over medium heat. Add the mustard seeds and cumin seeds, letting them sizzle for a few seconds. If using, add the dried red chili or curry leaves for an extra layer of flavor.
  3. Sauté the Aromatics
    Add the chopped onions to the pan and cook until soft and golden brown. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add Spices and Tomato
    Sprinkle in the turmeric, chili powder, and garam masala. Stir well to coat the onions in the spices. Add the chopped tomato and cook until it softens and blends with the mixture.
  5. Combine the Lentils and Tempering
    Pour the cooked lentils into the pan with the spice mixture. Stir well, then let it simmer for another 5-10 minutes to allow the flavors to meld. If the dhal is too thick, add a little water to adjust the consistency.
  6. Add Coconut Milk (Optional)
    For a creamy and slightly sweet taste, add coconut milk and stir. Let it simmer for another two minutes.
  7. Season and Garnish
    Adjust salt to taste, then remove from heat. Garnish with fresh coriander leaves.
