How to Make Dombolo Without Yeast

Dombolo, also known as steamed bread, is a soft and comforting dish enjoyed in many Southern African homes, especially in South Africa and Zimbabwe. Traditionally, dombolo is made with yeast to help the dough rise. However, if you do not have yeast or prefer a quicker method, you can still prepare a soft and satisfying version using baking powder instead.
Learning how to make dombolo without yeast is practical because it saves time and uses simple ingredients commonly found in most kitchens. While the texture may be slightly different from the yeast version, the result is still fluffy, moist, and perfect to serve with stews or soups.
-
Ingredients You Will Need
To prepare yeast-free dombolo, gather the following ingredients.
- 3 cups cake flour
• 2 tablespoons baking powder
• 1 teaspoon salt
• 1 tablespoon sugar
• 1 cup lukewarm water
• 2 tablespoons cooking oil or melted butter
Baking powder replaces yeast as the rising agent, helping the dough expand during steaming.
-
Mixing the Dough
Start by placing the flour, baking powder, salt, and sugar into a large mixing bowl. Stir the dry ingredients together thoroughly to ensure the baking powder is evenly distributed. Proper mixing is important because uneven baking powder can affect how the bread rises.
Add the oil or melted butter to the dry mixture. Gradually pour in the lukewarm water while mixing with your hands or a spoon. Continue mixing until a soft dough forms.
Knead the dough gently for a few minutes until smooth. Since this version does not use yeast, there is no need for long kneading or waiting for the dough to rise.
-
Preparing for Steaming
Lightly grease a heatproof bowl or small pot that fits inside a larger pot. Shape the dough into a round ball and place it into the greased container.
In a large pot, add enough water to create steam but not so much that it touches the bottom of the dough container. Place a small stand or metal ring at the bottom of the pot to keep the dough bowl elevated above the water.
Cover the pot tightly with a lid. To prevent steam from dripping onto the dough, you can place a clean kitchen towel under the lid before closing it.

Steaming the Dombolo
Bring the water to a gentle boil, then reduce to medium heat. Steam the dough for about 45 to 60 minutes. Avoid opening the lid frequently, as this releases steam and can affect the texture.
After about 45 minutes, insert a skewer or knife into the center. If it comes out clean, the dombolo is ready. If not, continue steaming for a few more minutes.
Once cooked, remove the bread carefully and allow it to cool slightly before slicing.
