    If you love rich, milky sweets, learning how to make burfee at home is a rewarding experience. Burfee, also spelled barfi, is a popular fudge-like dessert enjoyed across India and other parts of South Asia. It is commonly prepared during festivals, weddings, and special celebrations, but you do not need a special occasion to enjoy it. With just a few ingredients such as milk powder, sugar, and ghee, you can create soft, flavorful burfee in your own kitchen. The process is straightforward, and once you understand the basics, you can experiment with different flavors like coconut, chocolate, or pistachio.

      Ingredients and Equipment You Will Need

    Before starting, gather all your ingredients to ensure a smooth cooking process. Traditional burfee recipes vary, but a simple milk powder version works well for beginners.

    • 2 cups milk powder
      • 1 cup sugar
      • ½ cup milk
      • 2 tablespoons ghee
      • ½ teaspoon cardamom powder
      • Chopped nuts for garnish, optional
      • Non-stick pan
      • Spatula
      • Greased tray or lined dish

    Having your tray prepared in advance is important because burfee sets quickly once cooked.

    1. Preparing the Sugar Syrup Base

    Place the non-stick pan over medium heat and add the milk and sugar. Stir continuously until the sugar completely dissolves. Allow the mixture to simmer gently for a few minutes.

    Add the ghee and continue stirring. The ghee gives burfee its rich flavor and smooth texture. Keep the heat moderate to prevent burning. The mixture should thicken slightly but remain smooth.

    Reduce the heat to low before gradually adding the milk powder. Stir constantly to avoid lumps. The mixture will start to thicken quickly as the milk powder absorbs the liquid.

    Continue stirring until the mixture leaves the sides of the pan and forms a soft dough-like consistency. This usually takes about 5 to 8 minutes. Do not overcook, as this can make the burfee dry and crumbly.

    Once thickened, add cardamom powder and mix well. Cardamom adds a warm, aromatic flavor that complements the sweetness beautifully.

    1. Setting and Cutting the Burfee

    Immediately transfer the mixture into your greased or lined tray. Use a spatula to spread it evenly and smooth the surface. Work quickly, as the mixture begins to set as it cools.

    If desired, sprinkle chopped almonds, pistachios, or cashews on top and gently press them into the surface. Allow the burfee to cool at room temperature for about 1 to 2 hours until firm.

    Once fully set, cut into squares or diamond shapes using a sharp knife.
