    Braai pap is a classic South African staple made from maize meal, often served alongside grilled meat at a braai. It’s simple, filling, and loved for its smooth texture and subtle flavor that perfectly complements savory dishes like chakalaka, wors, or steak. Depending on how it’s cooked, pap can be soft and creamy or firm enough to slice. Cooking good braai pap takes patience and the right balance of water, maize meal, and steady heat. With a few basic steps, you can prepare delicious pap that brings the whole meal together.

    1. Gather the Ingredients
      To make braai pap, you’ll need maize meal (also called mielie meal), water, and a pinch of salt. The ratio of water to maize meal determines the texture. For soft pap, use about four cups of water for every cup of maize meal. For stiff pap, use roughly two and a half cups of water per cup of maize meal. You can also add a teaspoon of butter for extra richness, though this is optional.
    2. Boil the Water
      In a large pot, bring the measured water to a boil over medium heat. Add the salt and, if you like, a little butter. Make sure the pot is big enough because pap tends to bubble and thicken as it cooks. Once the water starts boiling, reduce the heat slightly so it simmers steadily.
    3. Add the Maize Meal
      Slowly pour the maize meal into the boiling water while stirring constantly with a wooden spoon or whisk. This helps prevent lumps from forming. Continue stirring until all the maize meal is incorporated and the mixture begins to thicken. Once it reaches a porridge-like consistency, cover the pot and lower the heat.
    4. Cook and Steam the Pap
      Let the pap cook gently for about 30 to 40 minutes. Avoid stirring too often—just open the lid every 10 minutes to check the texture and give it a light mix if needed. For firm pap, keep the lid on and allow it to steam in its own heat. For softer pap, you can add a small splash of hot water midway through cooking. The longer it steams, the smoother and more flavorful it becomes.
    5. Serve and Enjoy
      When the pap is ready, fluff it gently with a fork if it’s soft, or cut it into slices if it’s firm. Serve it hot with your favorite braai meat, tomato relish, or chakalaka.
