    Chicken livers stew is a flavorful and budget-friendly dish that’s quick to prepare and rich in nutrients. It’s a favorite for those who enjoy hearty, home-cooked meals full of depth and warmth. The key to cooking chicken livers perfectly is to clean them well and avoid overcooking, as they can become tough and grainy. When prepared with onions, tomatoes, and spices, chicken livers turn tender and delicious, making them perfect to enjoy with rice, ugali, or chapati.

    1. Prepare the Chicken Livers
      Start by cleaning the chicken livers thoroughly under running water. Trim off any visible fat or connective tissue, then cut the livers into bite-sized pieces. Soak them briefly in milk or water with a bit of lemon juice for about 10 minutes to reduce the strong taste, then rinse and drain. Pat dry with a paper towel and set aside.
    2. Prepare the Ingredients
      Chop one onion, two tomatoes, and a clove or two of garlic. You can also add green peppers, carrots, or chilies for more flavor and color. Gather your seasonings — salt, black pepper, curry powder, paprika, and a pinch of thyme or mixed herbs.
    3. Fry the Aromatics
      Heat two tablespoons of oil or butter in a pan over medium heat. Add the chopped onions and sauté until they become soft and golden brown. Stir in the garlic and cook for about a minute until fragrant. Add curry powder, paprika, and any other spices you prefer, then mix well to release their aroma.
    4. Add Tomatoes and Cook the Sauce
      Add the chopped tomatoes to the pan and stir well. Cook until the tomatoes soften and form a thick sauce. If the mixture sticks, add a small splash of water. Allow it to simmer for about five minutes so the flavors develop into a rich base for the stew.
    5. Cook the Chicken Livers
      Add the cleaned chicken livers to the sauce and stir gently to coat them well. Cover and cook on medium heat for about 10 to 12 minutes, stirring occasionally. Be careful not to overcook them — the livers should remain tender and slightly soft inside. If you like your stew a bit saucy, add half a cup of water or stock and let it simmer for another few minutes until thickened.
    6. Serve and Enjoy
      Once done, garnish with fresh coriander or parsley and serve your chicken livers stew hot. It goes perfectly with ugali, rice, chapati, or mashed potatoes.
