    Mabele porridge, also known as sorghum porridge, is a traditional African dish that’s both nutritious and comforting. Made from fermented or plain sorghum flour, it has a slightly tangy flavor and a smooth, hearty texture. Mabele is packed with fiber, iron, and essential minerals, making it a healthy choice for breakfast or as an accompaniment to savory meals. Depending on your preference, it can be prepared as a thick porridge for eating with stew or as a thinner, smoother version enjoyed at breakfast with milk or sugar.

    1. Prepare the Ingredients
      To make mabele porridge, you’ll need one cup of sorghum flour, about three cups of water, and a pinch of salt. You can also add a bit of sugar, milk, or butter depending on how you like your porridge. Some people use fermented mabele, which gives the porridge a pleasantly sour taste — perfect for those who enjoy traditional, earthy flavors. If you’re using fermented mabele, stir it well before cooking to make sure the texture is smooth.
    2. Mix the Flour and Water
      In a mixing bowl, combine the sorghum flour with a cup of cold water to form a smooth paste. Stir thoroughly to remove any lumps. This step is important because it ensures that your porridge cooks evenly without clumping.
    3. Heat the Mixture
      In a medium-sized pot, bring two cups of water to a gentle boil over medium heat. Once it starts boiling, slowly pour in the mabele mixture while stirring continuously with a wooden spoon or whisk. Stirring prevents the porridge from sticking to the bottom of the pot and helps it thicken smoothly.
    4. Cook Until Thick and Smooth
      Reduce the heat to low and continue stirring as the porridge thickens. Let it simmer for about 15 to 20 minutes. If it becomes too thick, add a little more hot water until you reach your preferred consistency. Add a pinch of salt to enhance the flavor. For a creamier and slightly richer taste, you can stir in a tablespoon of butter or a splash of milk near the end of cooking.
    5. Serve and Enjoy
      Once the mabele porridge is cooked and smooth, remove it from the heat and let it cool slightly before serving. For a breakfast version, serve it warm with sugar, milk, or honey. For a savory option, serve it thick and plain alongside meat, vegetables, or sour milk (amasi).
