Mixed vegetables are a colorful and healthy addition to any meal. They’re packed with vitamins, minerals, and fiber, making them an excellent choice for anyone looking to eat more balanced meals. Whether you’re cooking fresh, frozen, or canned veggies, the key to great mixed vegetables is keeping them tender, flavorful, and vibrant. They can be enjoyed as a side dish, added to stews, stir-fries, or even served on their own with a bit of seasoning.

    1. Prepare the Vegetables
If you’re using fresh vegetables, start by washing them thoroughly under cold running water. Chop them into bite-sized pieces for even cooking. Common choices include carrots, peas, green beans, corn, and bell peppers, but you can use any mix you prefer. If you’re using frozen mixed veggies, there’s no need to thaw them — they can go straight into the pan or pot. For canned vegetables, drain and rinse them to remove excess salt or preservatives.
    2. Steam or Boil the Veggies
The simplest way to cook mixed vegetables is by steaming or boiling. To boil, fill a pot with water and bring it to a gentle boil. Add a pinch of salt, then add your vegetables. Cook for three to five minutes until they’re tender but still slightly firm. Overcooking can cause them to lose color and nutrients. If you prefer steaming, place the veggies in a steamer basket over boiling water and steam for about five minutes. This method preserves more of their natural flavor and texture.
    3. Stir-Fry for More Flavor
For a tastier and slightly crisp texture, try stir-frying your mixed vegetables. Heat a tablespoon of oil or butter in a pan or wok over medium-high heat. Add chopped onions or garlic for extra aroma, then toss in your vegetables. Stir continuously for five to seven minutes until they’re cooked but still have a little crunch. Season with salt, pepper, and your favorite spices. A dash of soy sauce or lemon juice can also add a nice flavor boost.
    4. Make a Saucy Version (Optional)
If you prefer your mixed veggies in a sauce, you can create a simple one using onions, tomatoes, and spices. Sauté chopped onions in oil until soft, add diced tomatoes or tomato paste, and let it simmer for a few minutes. Then add your cooked vegetables, stir well, and cook for another five minutes to let the flavors blend.
    5. Serve and Enjoy
Once your mixed vegetables are cooked, serve them hot as a side dish or mix them into rice, pasta, or noodles for a complete meal. You can also top them with melted cheese or a sprinkle of herbs for extra flavor.
