Prawn pasta is a simple yet elegant dish that combines tender prawns with a creamy or tomato-based sauce and perfectly cooked pasta. It is a versatile meal that works well for quick weeknight dinners or special occasions. The key to a delicious prawn pasta is keeping the prawns juicy, choosing the right sauce, and allowing the pasta to absorb all the flavors. With a few basic ingredients and careful preparation, you can create a rich, satisfying dish that tastes restaurant-quality without much effort.

    1. Prepare the Prawns
Start by cleaning and deveining the prawns if they are not already prepared. Rinse them under cold water and pat them dry with a paper towel. Season lightly with salt, black pepper, and a touch of paprika or garlic powder. This enhances the flavor without overpowering the natural sweetness of the prawns. If you prefer a more intense taste, you can marinate them briefly with lemon juice and olive oil, but keep the marinating time short so the prawns do not toughen.
    2. Cook the Pasta
Bring a large pot of salted water to a boil. Add your pasta of choice — spaghetti, fettuccine, linguine, or penne all work well. Cook until al dente, which means it should be soft but still have a slight bite. Before draining, reserve about one cup of the pasta cooking water as it can be used to thin or enrich the sauce later. Set the pasta aside while you prepare the prawns and sauce.
    3. Sauté the Prawns
Heat a tablespoon of olive oil or butter in a pan over medium-high heat. Add the prawns in a single layer and cook for about two minutes on each side until they turn pink and opaque. Do not overcook them, as they can become rubbery. Once ready, remove the prawns from the pan and set them aside to avoid overcooking while the sauce finishes.
    4. Make the Sauce
In the same pan, add more oil or butter if needed and sauté chopped onions and garlic until soft and fragrant. For a creamy sauce, add cream and a splash of pasta water, letting it simmer until slightly thickened. For a tomato-based sauce, add crushed tomatoes or pasta sauce and let it cook until rich. Season with salt, pepper, and herbs like parsley, thyme, or basil. Add a squeeze of lemon for brightness.
    5. Combine and Serve
Return the prawns to the sauce, then add the cooked pasta. Toss gently until everything is coated and heated through. If the sauce is too thick, add a little pasta water. Finish with grated Parmesan, fresh parsley, or chili flakes for extra heat.
