      Ingredients and Preparation

    Before cooking, it is important to properly clean and prepare the chicken feet. Fresh, properly cleaned chicken feet are key to good flavor and texture.

    • 1 kilogram chicken feet
      • 1 tablespoon salt
      • 1 tablespoon vinegar or lemon juice
      • 1 onion, chopped
      • 2 cloves garlic, minced
      • 1 tablespoon soy sauce
      • 1 teaspoon paprika
      • 1 teaspoon curry powder or chili powder
      • 2 cups water or chicken stock
      • Cooking oil

    Start by trimming off the nails using kitchen scissors. Wash the chicken feet thoroughly with water, salt, and vinegar or lemon juice to remove any residue. Rinse well and drain.

    1. Boiling the Chicken Feet

    Place the cleaned chicken feet into a large pot and cover them with water. Bring to a boil over medium-high heat.

    Let them boil for about 10 minutes, then drain and rinse again. This initial boiling helps remove impurities and improves the final taste.

    Return the chicken feet to the pot, add fresh water or chicken stock, and simmer gently for 30 to 45 minutes until they become tender. They should be soft but not falling apart.

    1. Cooking with Flavor

    In a separate pan, heat a small amount of oil over medium heat. Add chopped onion and sauté until soft. Stir in the garlic and cook until fragrant.

    Add paprika, curry powder or chili powder, and soy sauce. Stir well to combine the spices.

    Transfer the boiled chicken feet into the pan and mix thoroughly so they are coated in the flavorful sauce. Add a small amount of the cooking broth if needed and allow everything to simmer together for another 15 to 20 minutes. This step allows the chicken feet to absorb the seasoning fully.

    Chicken feet can be served hot as a main dish or snack. They pair well with:

    • Steamed rice
      • Pap or ugali
      • Crusty bread
      • Spicy dipping sauce

    The texture is soft and slightly sticky due to natural collagen, which many people find enjoyable.
