Fudge is a rich, sweet treat that is usually made with condensed milk, but you can still make a delicious batch without it. Whether you’ve run out of condensed milk or prefer an alternative, this recipe uses basic ingredients like sugar, butter, and milk to create a creamy and smooth fudge. Here is how to make fudge without condensed milk.

    Ingredients

    • 2 cups granulated sugar
    • ½ cup whole milk
    • ½ cup unsalted butter
    • 1 teaspoon vanilla extract
    • ¼ teaspoon salt
    • ½ cup cocoa powder (for chocolate fudge) or 1 cup chocolate chips
    • ½ cup chopped nuts (optional)

    Instructions

    1. Prepare the Baking Dish

Line a square baking dish (8×8 inches) with parchment paper or lightly grease it with butter. This will prevent the fudge from sticking and make it easier to remove once set.

    1. Heat the Sugar, Butter, and Milk

In a heavy-bottomed saucepan, combine sugar, milk, and butter. Place the pan over medium heat and stir continuously until the sugar dissolves and the butter melts completely.

    1. Bring to a Boil

Allow the mixture to come to a gentle boil. Reduce the heat slightly and let it simmer for about 5-7 minutes, stirring frequently. Use a candy thermometer to check the temperature—it should reach around 112-115°C (234-240°F), known as the “soft ball stage.” If you don’t have a thermometer, you can test by dropping a small amount of the mixture into cold water; it should form a soft, pliable ball.

    1. Add the Flavoring

Remove the saucepan from heat and stir in vanilla extract and salt. If making chocolate fudge, mix in cocoa powder or chocolate chips until fully melted and smooth. For extra texture, add chopped nuts at this stage.

    1. Beat the Mixture

Let the mixture cool for about 5 minutes, then beat it vigorously with a wooden spoon or electric mixer for 2-3 minutes until it thickens and loses its glossy sheen. This helps give the fudge a smooth, creamy texture.

    1. Pour and Set

Quickly pour the mixture into the prepared baking dish and spread it evenly. Let it cool at room temperature for at least 2 hours, or place it in the fridge to speed up the setting process.

    1. Cut and Serve

Once firm, lift the fudge out of the dish using the parchment paper and cut it into small squares. Enjoy your homemade fudge, or store it in an airtight container for up to a week.
