Jelly babies are small, baby-shaped gummy candies that are popular for their bright colors and sweet flavors. They are famously associated with the United Kingdom and are well known through brands like Bassett’s. Making them yourself allows you to control the ingredients, flavors, and sweetness while enjoying the creative process.

    Homemade jelly babies require simple ingredients and a bit of patience while they set. With the right method, you can achieve that classic chewy consistency without needing professional equipment.

    You will need:

    • 2 tablespoons unflavored gelatin
    • 1 packet flavored jelly powder or fruit-flavored gelatin

    • 2 to 3 tablespoons sugar
    • 1 tablespoon lemon juice
    • A small saucepan
    • A whisk
    • Silicone jelly baby molds
    • A dropper or spoon

    Silicone molds shaped like babies give the sweets their traditional appearance, but you can use any small candy mold if needed.

    1. Bloom the Gelatin Properly

    Pour the cold water into a bowl and sprinkle the unflavored gelatin evenly over it. Let it sit for about 5 minutes.

    This process, known as blooming, allows the gelatin to absorb the water and swell. Proper blooming ensures your jelly babies will have a smooth, firm texture instead of lumps.

    1. Dissolve the Mixture

    In a saucepan over low heat, combine:

    • The bloomed gelatin
    • The flavored jelly powder
    • The hot water
    • Sugar
    • Lemon juice

    Stir continuously until everything fully dissolves. Do not allow the mixture to boil, as boiling can weaken the gelatin and affect the final texture.

    The mixture should become smooth and slightly glossy.

    1. Pour Into Molds

    Carefully pour the liquid mixture into your silicone molds. Using a dropper or small spoon helps prevent spills and ensures clean shapes.

    Fill each mold cavity evenly but avoid overfilling.

    Tap the mold gently on the counter to release air bubbles. Removing bubbles helps your jelly babies look smooth and well-formed.

    1. Let Them Set Completely

    Place the filled molds in the refrigerator for at least 2 to 4 hours. For best results, allow them to set overnight.

    During this time:

    • The gelatin firms up
    • The candies develop their chewy texture
    • The shapes become easier to remove

    Avoid moving the molds while they are setting.

    1. Remove and Coat

    Once fully set, gently pop the jelly babies out of the molds.

    For a classic finish, you can lightly coat them in:

    • Granulated sugar
    • Cornstarch mixed with powdered sugar

    Coating prevents them from sticking together and adds a pleasant outer texture.

    1. Store Properly

    Store your homemade jelly babies in an airtight container at room temperature if your climate is cool. In warmer environments, refrigerate them to prevent melting.

    They typically stay fresh for up to one week.

    Making jelly babies at home gives you room for creativity.
