It is especially common in India, where lentils, known as dal, are a daily staple and prepared in countless regional variations.

      Choose the Right Lentils

    Different types of lentils produce different textures.

    Red lentils are ideal if you want a creamy, smooth curry. They cook faster and break down easily.

    1. Gather Your Ingredients

    A basic lentil curry requires simple ingredients that are widely available.

    You will need:

    • 1 cup lentils
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon grated ginger
    • 1 tomato, chopped or 1 cup canned tomatoes
    • 1 cup coconut milk or water
    • 2 cups vegetable broth or water
    • 2 tablespoons cooking oil
    • 1 teaspoon curry powder
    • ½ teaspoon turmeric
    • 1 teaspoon ground cumin
    • Salt to taste

    Optional additions include chili powder, fresh coriander, or spinach.

    1. Rinse the Lentils

    Place the lentils in a bowl and rinse them under cold water until the water runs clear. This removes dust and excess starch.

    Drain well before cooking.

    1. Sauté the Aromatics

    Heat oil in a large pot over medium heat. Add chopped onions and cook until soft and lightly golden.

    Add:

    • Garlic
    • Ginger

    Stir for about one minute until fragrant. Do not allow the garlic to burn.

    1. Add Spices and Tomatoes

    Add curry powder, turmeric, and cumin to the pot. Stir briefly to toast the spices, which enhances their flavor.

    Then add chopped tomatoes and cook for a few minutes until they soften and blend with the spices.

    At this stage, the mixture should be aromatic and slightly thick.

    1. Add Lentils and Liquid

    Pour in the rinsed lentils along with vegetable broth and coconut milk.

    Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 20 to 30 minutes, stirring occasionally.

    The lentils will:

    • Soften
    • Absorb the flavors
    • Thicken the curry naturally

    If the curry becomes too thick, add a small amount of water.

    1. Adjust Seasoning

    Taste the curry and adjust salt or spice levels as needed. If you prefer extra heat, add a pinch of chili powder.

    For added freshness, stir in chopped coriander or a squeeze of lemon juice just before serving.

    Lentil curry pairs well with:

    • Steamed rice
    • Flatbreads like naan or roti
    • Quinoa
    • Steamed vegetables

    Its creamy texture and rich spices make it satisfying on its own or as part of a larger meal.
