      Ingredients and Tools

    Before you begin, make sure you have everything ready for smooth preparation.

    For the Peri-Peri Marinade

    • 1 whole chicken or 1kg chicken pieces
    • 6–8 fresh red chilies (or peri-peri peppers)
    • 6 cloves garlic
    • 1 teaspoon paprika
    • 1 teaspoon black pepper
    • 1 teaspoon dried oregano
    • 1 teaspoon chili flakes (optional for extra heat)
    • ½ cup lemon juice
    • 2 tablespoons vinegar
    • ¼ cup olive oil
    • 1 teaspoon salt
    • 1 tablespoon brown sugar or honey

    Tools You’ll Need

    • Blender or food processor
    • Mixing bowl
    • Baking tray or grill pan
    • Knife and cutting board
    • Basting brush (optional)
    1. Prepare the Peri-Peri Marinade

    This is the heart of Nandos-style chicken—bold, spicy, and aromatic.

    • Add chilies, garlic, lemon juice, vinegar, and olive oil to the blender.
    • Blend until smooth.
    • Add paprika, black pepper, oregano, salt, and sugar.
    • Blend again until everything combines into a rich red paste.
    • Taste and adjust heat or sweetness as preferred.
    1. Marinate the Chicken

    A good marinade ensures juicy and flavorful chicken.

    • Clean and pat dry the chicken pieces.
    • Score or cut small slits on the meat to help the marinade soak in.
    • Pour the peri-peri marinade into a bowl and coat the chicken thoroughly.
    • Cover with cling wrap and refrigerate for 4–24 hours.
    • The longer it marinates, the stronger and tastier the flavor becomes.

    Option 1: Grill

    • Preheat your grill.
    • Cook chicken on medium heat for 30–40 minutes, turning occasionally.

    Option 2: Oven

    • Preheat the oven to 200°C (400°F).
    • Arrange chicken on a baking tray.
    • Bake for 35–45 minutes, turning halfway through.
    • Grill (broil) for the last 5 minutes for a charred look.

    Option 3: Air Fryer

    • Cook at 180°C (356°F) for 20–25 minutes, flipping once.

    To complete the Nandos experience:

    • Pour leftover marinade into a small pan.
    • Simmer for 5 minutes to thicken into a dipping sauce.
    • Serve chicken with fries, coleslaw, rice, or grilled corn.
