If you enjoy crispy potatoes without the excess oil of deep frying, learning how to make oven chips is a practical kitchen skill worth mastering. Oven chips are a healthier alternative to traditional fried chips, yet they can still be golden, crunchy on the outside, and soft on the inside when prepared correctly. With the right potatoes, proper cutting, and controlled baking, you can achieve satisfying results straight from your oven.

Oven chips are popular worldwide and are often served alongside grilled meats, burgers, or roasted vegetables. In many homes across Kenya and beyond, they are a simple and affordable side dish that works for both everyday meals and special occasions.

      Choose the Right Potatoes

The type of potato you use makes a big difference.

    Look for:

    • Large, firm potatoes
    • Starchy varieties
    • Smooth skin without green spots

Starchy potatoes crisp better and create a fluffy interior. Avoid waxy potatoes, as they may turn soft rather than crispy.

    1. Wash, Peel, and Cut Evenly

Wash the potatoes thoroughly to remove dirt. You may peel them or leave the skin on for extra texture and nutrients.

Cut the potatoes into even chip shapes. Uniform size ensures they cook evenly.

    Keep in mind:

    • Thicker chips take longer to cook
    • Thin chips become crisp faster
    • Even sizing prevents some pieces from burning
    1. Soak to Remove Excess Starch

Place the cut potatoes in a bowl of cold water and soak for at least 20 to 30 minutes.

    Soaking helps:

    • Remove excess starch
    • Improve crispiness
    • Prevent sticking

After soaking, drain the water and pat the chips completely dry using a clean kitchen towel. Moisture prevents browning.

    1. Preheat the Oven Properly

Preheat your oven to 200°C. A hot oven is essential for achieving crispy edges.

Place your baking tray inside the oven while it preheats. A hot tray helps start the crisping process immediately when the chips are added.

    1. Season and Coat Lightly

Place the dried potato chips in a bowl and drizzle with a small amount of oil. Toss until evenly coated.

    Add seasoning such as:

    • Salt
    • Black pepper
    • Paprika
    • Garlic powder
    • Mixed herbs

Use just enough oil to coat the chips lightly. Too much oil can make them greasy.

    1. Arrange in a Single Layer

Carefully spread the chips onto the preheated tray in a single layer.

    Ensure:

    • Chips do not overlap
    • Space is left between pieces
    • The tray is not overcrowded

Crowding traps steam and prevents crisping.

    1. Bake and Turn

Bake for 30 to 40 minutes, depending on thickness. Turn the chips halfway through cooking to ensure even browning.

Properly cooked oven chips should be:

    • Golden brown
    • Crisp on the outside
    • Soft and fluffy inside

If you want extra crispiness, switch to grill mode for the final few minutes, watching closely to avoid burning.

    1. Serve Immediately

Remove from the oven and sprinkle a little extra salt if desired. Oven chips are best served hot.

    They pair well with:

    • Grilled chicken or beef
    • Burgers
    • Fish
    • Fresh salad
    • Dipping sauces
