Marinating chicken with mayonnaise is a simple and flavorful way to tenderize the meat while adding a rich, creamy taste. Mayonnaise acts as a fat-based marinade that helps seal in moisture, making your chicken juicy and soft when cooked. Whether you plan to grill, bake, or pan-fry, this method works well for various dishes. Here’s how to marinate chicken with mayonnaise step by step.
- Choose Your Chicken
Start by selecting the chicken pieces you want to marinate. You can use chicken breasts, thighs, wings, or drumsticks—boneless or bone-in. Wash and pat them dry with a paper towel to help the marinade stick better.
Make sure the chicken is fresh, and trim off any excess fat or skin if needed.
- Gather the Ingredients
To make the marinade, you’ll need the following basic ingredients:
- ½ cup of mayonnaise
- 2 cloves of garlic (minced) or 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon paprika or chilli powder (optional for spice)
- 1 tablespoon lemon juice or vinegar
- Salt to taste
- Optional: herbs like thyme, oregano, or parsley for added flavour
You can adjust the seasoning depending on your taste or the dish you’re preparing.
- Prepare the Marinade
In a mixing bowl, combine the mayonnaise with all the spices, lemon juice, and garlic. Mix well until you have a smooth, evenly blended marinade. Taste and adjust the seasoning if needed.
The lemon juice or vinegar helps break down the chicken fibres, making it more tender.
- Coat the Chicken
Place the chicken pieces in a bowl or a zip-lock bag. Pour the marinade over the chicken and use your hands or a spoon to coat each piece thoroughly. Make sure the chicken is completely covered with the mayonnaise mixture.
If you’re using a bag, seal it tightly and massage the marinade into the chicken from outside the bag.
- Let It Marinate
Cover the bowl with a lid or cling film, or leave the sealed bag in the fridge. Let the chicken marinate for at least 30 minutes. For best results, allow it to sit for 2 to 4 hours, or even overnight for deeper flavour and tenderness.
Do not marinate for more than 24 hours, as the acids can start to break down the meat too much.
- Cook as Desired
After marinating, remove the chicken from the fridge and let it sit at room temperature for 10–15 minutes before cooking. Grill, bake, or pan-fry the chicken as desired. Cook until the internal temperature reaches at least 75°C (165°F), or until the juices run clear.
Mayonnaise helps the outside develop a golden crust while keeping the inside juicy.
