    Coconut ice is a delicious, no-bake sweet treat made from coconut and condensed milk. It has a soft, fudge-like texture and is often made in two colors—pink and white—for a classic look. This easy recipe is perfect for parties, gifts, or simply as a nostalgic treat. Here is how to make coconut ice.

    Ingredients

    • 2 cups desiccated coconut
    • 1 can (395g) sweetened condensed milk
    • 2 ½ cups icing sugar (powdered sugar), sifted
    • ½ teaspoon vanilla extract
    • A few drops of pink food coloring (optional)

    Steps to Make Coconut Ice

    1. Prepare the Mixture
      In a large mixing bowl, combine the desiccated coconut, sifted icing sugar, and condensed milk. Add the vanilla extract and stir until everything is well combined into a thick, sticky mixture.
    2. Divide and Color
      Split the mixture into two equal portions. Leave one portion white and add a few drops of pink food coloring to the other half. Mix well until you achieve an even pink color.
    3. Layer the Coconut Ice
      Line a square or rectangular baking dish with parchment paper. Press the white layer evenly into the dish, smoothing it with the back of a spoon. Then, carefully spread the pink layer over the white layer, pressing it down firmly to ensure both layers stick together.
    4. Set the Coconut Ice
      Place the dish in the refrigerator and let it set for at least 2–3 hours, or until firm.
    5. Cut and Serve
      Once set, remove from the dish and cut into squares or rectangles. Store in an airtight container at room temperature for up to a week.
