Ingredients
- 2 cups desiccated coconut
- 1 can (395g) sweetened condensed milk
- 2 ½ cups icing sugar (powdered sugar), sifted
- ½ teaspoon vanilla extract
- A few drops of pink food coloring (optional)
Steps to Make Coconut Ice
- Prepare the Mixture
In a large mixing bowl, combine the desiccated coconut, sifted icing sugar, and condensed milk. Add the vanilla extract and stir until everything is well combined into a thick, sticky mixture. - Divide and Color
Split the mixture into two equal portions. Leave one portion white and add a few drops of pink food coloring to the other half. Mix well until you achieve an even pink color. - Layer the Coconut Ice
Line a square or rectangular baking dish with parchment paper. Press the white layer evenly into the dish, smoothing it with the back of a spoon. Then, carefully spread the pink layer over the white layer, pressing it down firmly to ensure both layers stick together. - Set the Coconut Ice
Place the dish in the refrigerator and let it set for at least 2–3 hours, or until firm. - Cut and Serve
Once set, remove from the dish and cut into squares or rectangles. Store in an airtight container at room temperature for up to a week.
