    Ingredients

    • 250g instant noodles or spaghetti
    • ½ cup mayonnaise
    • ½ cup plain yogurt or sour cream
    • 1 tablespoon curry powder
    • ½ teaspoon turmeric (optional, for color)
    • 1 teaspoon sugar
    • 1 tablespoon vinegar or lemon juice
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • ½ cup grated carrots
    • ½ cup chopped bell peppers (red, green, or yellow)
    • ½ cup frozen peas (thawed)
    • ½ cup chopped spring onions or red onion
    • 2 hard-boiled eggs, chopped (optional)

    Steps to Make Curry Noodle Salad

    1. Cook the Noodles
      Bring a pot of salted water to a boil and cook the noodles until soft but firm to the bite. Drain and rinse under cold water to stop the cooking process. Set aside.
    2. Prepare the Dressing
      In a mixing bowl, combine mayonnaise, yogurt or sour cream, curry powder, turmeric, sugar, vinegar, salt, and black pepper. Stir well until smooth and evenly mixed.
    3. Mix the Vegetables
      In a large bowl, combine the cooked noodles with grated carrots, chopped bell peppers, peas, and onions. If using hard-boiled eggs, add them at this stage.
    4. Combine Everything
      Pour the curry dressing over the noodles and vegetables. Toss well until everything is coated evenly. Adjust seasoning if needed.
    5. Chill Before Serving
      For the best flavor, cover the salad and refrigerate for at least 30 minutes before serving. This allows the flavors to develop.
