    Vegetable soup is a nutritious and comforting dish that’s not only easy to make but also incredibly versatile.

    Whether you’re a seasoned cook or a beginner in the kitchen, follow this step-by-step guide to create a flavorful and hearty vegetable soup.

    Ingredients

    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 3 carrots, peeled and diced
    • 2 celery stalks, diced
    • 1 bell pepper, diced
    • 2 potatoes, peeled and diced
    • 1 zucchini, diced
    • 1 cup green beans, trimmed and chopped
    • 1 can diced tomatoes (14 oz)
    • 6 cups vegetable broth
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano
    • Salt and pepper to taste
    • 2 cups chopped leafy greens (spinach, kale, or Swiss chard)
    • Fresh herbs for garnish (parsley, basil, or cilantro)

    Instructions

    1. Sauté the Aromatics

    Heat the olive oil in a large pot over medium heat.
