    • 500g of your preferred meat (chicken, fish, or goat meat), cut into bite-sized pieces
    • 2 liters of water or chicken/fish broth
    • 2-3 tablespoons of ground crayfish
    • 2 tablespoons of ground pepper soup spice mix (can be purchased at stores or made at home with a combination of spices like cayenne pepper, ginger, garlic, and African nutmeg)
    • 2 tablespoons of ground fresh pepper (scotch bonnet or habanero)
    • 1 medium-sized onion, finely chopped
    • 2-3 garlic cloves, minced
    • 1-inch piece of ginger, grated
    • 2-3 seasoning cubes (optional)
    • Salt to taste
    • A handful of scent leaves or basil leaves (substitute with uziza leaves if available), chopped
    • 1-2 tablespoons of palm oil (optional)

    Instructions

    Prepare the Meat: Wash the meat thoroughly and cut it into bite-sized pieces. If using fish, clean and gut it, then cut into suitable portions.

    Boil the Meat: In a large pot, add the meat, water or broth, chopped onions, minced garlic, grated ginger, ground crayfish, and pepper soup spice mix. If using seasoning cubes, add them as well. Bring to a boil over medium heat and let it cook until the meat is tender. The cooking time will vary depending on the type of meat used.

    Season the Soup: Once the meat is tender, add the ground fresh pepper and salt to taste. Adjust the amount of pepper according to your desired spice level. If you prefer a reddish color and a distinct flavor, add 1-2 tablespoons of palm oil at this stage.

    Simmer and Add Herbs: Reduce the heat to a gentle simmer and let the soup cook for an additional 5-10 minutes. This allows the flavors to meld together. Taste and adjust seasoning if needed. Stir in the chopped scent leaves or basil leaves for a burst of aromatic goodness.
