    Chilli bites, also known as “bhajias” or “pakoras,” are crispy, spiced fritters made with chickpea flour and a mix of herbs and spices. These flavorful snacks are popular in Indian cuisine and are often served with chutney or a dipping sauce. They are easy to make and perfect for a quick snack or as a side dish. Here is how to make chilli bites.

    Ingredients

    To make chilli bites, you will need:

    • 1 cup chickpea flour (gram flour)
    • ½ teaspoon baking powder
    • ½ teaspoon salt
    • ½ teaspoon turmeric powder
    • 1 teaspoon cumin seeds
    • ½ teaspoon chilli powder (adjust for spice preference)
    • 1 green chilli, finely chopped
    • ½ teaspoon garlic, minced
    • ½ teaspoon ginger, grated
    • ¼ cup chopped fresh coriander
    • ½ cup water (or as needed)
    • Oil for frying

    Steps to Make Chilli Bites

    1. Prepare the Batter
      In a mixing bowl, combine the chickpea flour, baking powder, salt, turmeric, cumin seeds, and chilli powder. Mix well to evenly distribute the spices.
    2. Add the Fresh Ingredients
      Stir in the chopped green chilli, garlic, ginger, and coriander. These ingredients enhance the flavor and aroma of the chilli bites.
    3. Mix with Water
      Gradually add water while stirring until a thick but smooth batter forms. The consistency should be thick enough to coat a spoon without running off.
    4. Heat the Oil
      In a deep pan or frying pot, heat oil over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; if it sizzles and rises to the surface, the oil is hot enough.
    5. Fry the Chilli Bites
      Using a spoon, drop small portions of batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook until golden brown, turning occasionally to ensure even frying.
    6. Drain the Excess Oil
      Once the chilli bites are crispy and golden, remove them from the oil and place them on a paper towel to drain excess oil.
    7. Serve and Enjoy
      Serve hot with a side of chutney, tomato sauce, or a yogurt-based dip. They can be enjoyed as a snack, appetizer, or side dish.
