    White sauce, also known as béchamel, is a classic base for many recipes. If you’re avoiding flour due to dietary needs or preference, there are alternative ways to achieve the same creamy texture. Below is a simple method using cornstarch instead of flour, which works well in most dishes. Here is how to make white sauce without flour.

    1. Gather Your Ingredients

    To make white sauce without flour, you’ll need the following:

    • 2 tablespoons of butter
    • 2 tablespoons of cornstarch (or arrowroot powder)
    • 2 cups of milk (dairy or plant-based)
    • Salt and pepper to taste
    • Optional: a pinch of nutmeg or grated cheese for extra flavour

    Cornstarch acts as a thickener just like flour, but without the gluten or heaviness.

    1. Heat the Butter

    In a saucepan, melt the butter over medium heat. Allow it to melt fully but don’t let it brown. The butter provides richness and helps carry the flavour.

    If you’re using a dairy-free spread or oil, the method remains the same—just ensure it’s heated gently.

    1. Mix the Cornstarch and Milk

    In a small bowl or jug, whisk the cornstarch into the cold milk until it dissolves completely. Avoid adding cornstarch directly into the hot pan, as it may clump.

    Once fully mixed, pour the milk and cornstarch mixture into the melted butter.

    1. Cook and Stir Until Thickened

    Stir continuously over medium heat. The sauce will slowly begin to thicken after 4 to 6 minutes. Keep stirring to prevent lumps and ensure a smooth texture.

    Once the sauce coats the back of a spoon, it’s ready. If it becomes too thick, you can thin it with a little more milk.

    1. Season and Use

    Add salt and pepper to taste. For added flavour, you can include a pinch of ground nutmeg or stir in some grated cheese if making a cheese sauce.

    Use the white sauce immediately over vegetables, pasta, lasagna, or in any recipe that calls for béchamel.
