    Egg sauce is a simple yet flavorful dish that can be enjoyed for breakfast, brunch, or dinner. Made with eggs, tomatoes, onions, and spices, egg sauce is versatile and pairs well with a variety of dishes, such as rice, pasta, bread, or even yam. Follow these step-by-step instructions on how to make egg sauce right in your own kitchen.

    Ingredients

    • 4 eggs
    • 2 medium-sized tomatoes, chopped
    • 1 small onion, chopped
    • 1 tablespoon of vegetable oil or butter
    • 1 teaspoon of ground crayfish (optional)
    • 1 teaspoon of curry powder
    • Salt and pepper to taste
    • Chopped fresh parsley or cilantro for garnish (optional)

    Instructions

    1. Start by chopping the tomatoes and onion into small pieces. Beat the eggs in a bowl and set aside. If using ground crayfish, measure it out and set aside.
    2. Heat the vegetable oil or butter in a frying pan over medium heat. Add the chopped onions and sauté until they are soft and translucent, about 2-3 minutes. Then, add the chopped tomatoes and cook until they are softened and starting to break down, about 5-7 minutes.
    3. Once the tomatoes have cooked down, add the ground crayfish (if using), curry powder, salt, and pepper to the pan. Stir well to combine the seasonings with the tomatoes and onions.
    4. Pour the beaten eggs into the pan with the seasoned tomatoes and onions. Allow the eggs to cook undisturbed for a minute or two until they start to set around the edges.
    5. Using a spatula or wooden spoon, gently scramble the eggs, stirring them occasionally to ensure even cooking. Continue to cook until the eggs are fully cooked through and no longer runny, about 3-4 minutes.
    6. Taste the egg sauce and adjust the seasoning with salt and pepper if needed, according to your preference.
    7. Once the eggs are cooked to your liking, remove the pan from the heat. Garnish the egg sauce with chopped fresh parsley or cilantro, if desired, for added flavor and visual appeal.
    8. Serve the egg sauce hot with your choice of accompaniment, such as rice, pasta, bread, or yam. Enjoy this versatile and delicious dish for breakfast, brunch, or dinner.

    Tips

    • Customize your egg sauce by adding other ingredients like bell peppers, green onions, or diced ham for extra flavor and texture.
    • For a spicier sauce, you can add chopped chili peppers or a dash of hot sauce.
