    Fat cakes, also known as vetkoek, are soft, golden deep-fried dough balls that are popular in many African countries. They have a crispy outside and a fluffy inside, making them perfect for breakfast, snacks, or even as a side dish. Using yeast in the dough gives them a light and airy texture. Here’s how you can make delicious fat cakes at home. Here is how to make fat cakes with yeast.

    Ingredients

    • 4 cups all-purpose flour
    • 2 teaspoons instant dry yeast
    • 3 tablespoons sugar
    • 1 teaspoon salt
    • 1½ cups warm water (adjust as needed)
    • 2 tablespoons vegetable oil (for the dough)
    • Cooking oil (for frying)

    Instructions

    1. Preparing the Dough

    In a large mixing bowl, combine the flour, yeast, sugar, and salt. Mix well to evenly distribute the ingredients. Make a well in the center and gradually add the warm water while mixing with a wooden spoon or your hands. Add the vegetable oil and continue kneading until the dough is soft and elastic. If the dough is too sticky, add a little more flour; if too dry, add a little more water.

    1. Letting the Dough Rise

    Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm area. Allow the dough to rise for about 1 hour or until it has doubled in size. This step is important because the yeast will help create soft and fluffy fat cakes.

    1. Shaping the Fat Cakes

    Once the dough has risen, punch it down to remove excess air. Lightly flour your hands and divide the dough into equal portions. Roll each portion into a ball or slightly flatten them if you prefer a more traditional vetkoek shape.

    1. Frying the Fat Cakes

    Heat cooking oil in a deep pot over medium heat. The oil should be hot but not smoking—about 170-180°C (340-360°F). To test, drop a small piece of dough into the oil; if it sizzles and rises to the top, the oil is ready.

    Gently place the dough balls into the oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes per side, turning occasionally, until they are golden brown and fully cooked inside. Remove with a slotted spoon and drain on a paper towel.

    1. Serving

    Fat cakes can be enjoyed plain, with butter, or filled with jam, cheese, or savory fillings like mince or polony. Serve them warm and enjoy their crispy, fluffy texture.
