    Some people prefer soaking the liver in milk for 20 to 30 minutes before cooking. This can help reduce bitterness and improve tenderness. If you choose to soak it, drain and pat dry before seasoning.

    Ox liver has a strong natural flavor, so simple seasoning works best.

    • Salt
    • Black pepper

    • Garlic powder

    Avoid adding too much salt at the beginning, as it can draw out moisture. You can adjust seasoning later.

    If cooked too long, it becomes tough and grainy.

    Do not simmer for too long after adding the liver back.
