       Ingredients

    For a simple garlic prawn pasta, you will need:

    • 250g pasta such as spaghetti or fettuccine
    • 300g fresh or thawed prawns, peeled and deveined
    • 3 cloves garlic, minced
    • 3 tablespoons olive oil
    • 1 cup fresh cream or 1 cup crushed tomatoes
    • ½ teaspoon chili flakes
    • Salt to taste
    • Black pepper to taste
    • Fresh parsley, chopped
    • Juice of half a lemon

    Choose fresh prawns whenever possible. They should have a mild ocean scent and firm texture.

    1. Cook the Pasta Properly

    Bring a large pot of salted water to a boil.

    Add the pasta and cook according to package instructions until al dente. Properly cooked pasta should be tender but still slightly firm when bitten.

    Before draining, reserve about half a cup of pasta water. This starchy water can help loosen and bind the sauce later.

    Drain the pasta and set aside.

    1. Prepare the Prawns

    Pat the prawns dry using paper towels. Season lightly with salt and black pepper.

    In a large pan over medium heat:

    • Add olive oil
    • Sauté garlic until fragrant
    • Add chili flakes

    Place the prawns in the pan in a single layer. Cook for about 2 to 3 minutes per side. Prawns cook quickly and turn pink when done. Avoid overcooking, as they can become rubbery.

    Remove prawns temporarily if needed to prevent overcooking while preparing the sauce.

    1. Make the Sauce

    For a creamy version:

    • Lower the heat
    • Add fresh cream to the pan
    • Simmer gently for a few minutes

    For a tomato-based version:

    • Add crushed tomatoes
    • Simmer until slightly thickened

    Add a splash of reserved pasta water if the sauce appears too thick. The starch helps create a smooth consistency.

    Return the prawns to the pan and stir gently.

    1. Combine Pasta and Sauce

    Add the drained pasta directly into the pan.

    Toss everything together so the pasta absorbs the flavors of the sauce. Squeeze in fresh lemon juice for brightness and sprinkle chopped parsley over the top.

    Taste and adjust seasoning if necessary.

    1. Serve Immediately

    Prawn pasta is best enjoyed fresh and hot.

    For presentation:

    • Garnish with extra parsley
    • Add grated Parmesan if desired
    • Serve with a side salad or garlic bread
